In a Pickle

superhealthylivingjourney
Pickled Cucumbers

Treasures In The Garden

Today, I was finally able to make time to Prepare, make and bottle my pickled cucumbers.I  made 3 large jars which hold about 15  sliced up cucumbers.. It was quite an easy recipe, and took little time to  to bring to fruition. The longest time was the cooling process. But I still have loads of cucumbers coming on the vines. So I am going to have to find another recipe use them up. And yes, I have given loads away and still they keep coming.

This is my recipe.

Ingredients....

Home grown cucumbers
Apple Cider Vinegar
Mustard seed
Coconut sugar Water

Method.... Put jars in the dishwasher or on low in the oven to warm.

Pick, wash  and slice the Kingaroy (they can be left whole if whole if wanted)

Pour 600mls apple cider vinegar and 600mls of filtered water into a a saucepan with 2 tablespoons of coconut sugar and bring to the boil (this makes 1.21 of pickling mixture which is enough for 4 x half litre jars of pickled cucumbers). My jars are larger than a half litre. That is why I only got 3 jars of pickles.

Take the jars out of the warmer and pack the sliced cucumber  tightly into the jars.

Bring a separate large saucepan of water to the boil.

Sprinkle a teaspoon of mustard seeds over the cucumbers in the jar.

Pour the pickling mixture into the prepared jars covering the cucumbers completely. Then seal the jars.

Then place the sealed jars in the saucepan of boiling water and leave them for 5 minutes.- this is done to ensure that the pickles will keep for a period of time on the pantry shelf.

Once opened store in the fridge.

Pretty easy hey!

I didn't taste test this time. But the look pretty yummy!
Can't wait to have with salad or cucumber sandwiches.

ENJOY.... the making and the eating.

Spice baby Spice

LIVING HEALTHY WITH NATURE

Putting healthy spice into our life......

These spices can take a dish from bland to delicious. But.... did you know, these  magical spices can also boost your life with some pretty magical healing compounds.

Here are three pretty exciting and tasty spices that you can add to your HEALTHY LIVING regime.... RIGHT NOW!

CAYENNE

Cayenne powder comes from ground dried, red hot chilli peppers. The important ingredient in this spice is CAPSAICIN which is found in some prescriptions, and over counter arthritis and muscle pain creams.

Add a generous dash of cayenne to soups, stews, stir fries to ease cold and flu congestion as it shrinks swollen blood vessels.

It could even trim waistlines by speeding up metabolism.

TUMERIC

Tumeric is an Indian spice that has been used to treat maladies since quite ancient times.

CURCUMIN is the key ingredient here. It is a potent antioxidant which has the potential to treat tumour growths and suppress enzymes that can trigger abnormal cell changes. Studies have shown it as being useful for treating arthritis, ALzheimer's  and heart disease.

Use more tumeric in your diet by adding it to curries, stews, sipping tumeric tea and/ or taking a daily capsule.

Start Small

Healthy Living With Nature

Start small. Put one thing into your life at a time. When you feel this has become part of your life and you can do it easily and you can see the benefit of what you are doing.... then start on a new thing- but not before it is part of your life.

More of the good stuff for Healthy Living.

On our journey we found it so important to stay HYDRATED. The optimum level of FILTERED water to consume is about 2 litres per person per day- plain filtered water. We use tank water which we filter twice to be sure we are getting the cleanest water possible, into our bodies.
WE STAY AWAY FROM COFFEE (and if we HAVE to DRINK COFFEE WE GRIND OUR OWN ORGANIC BREW AND PERCOLATE or STEEP IN A COFFEE POT ), ANY KIND OF SOFT DRINK, ALCOHOL. AND IF WE HAVE TO USE THESE THINGS WE CHOOSE  ORGANIC.
If you want to get away from dairy it's possible to make your own milk.
We started at first making OAT MILK which is supposed to be good for the heart. First we bought ready made, but once we realised we could make our own (and it is much cheaper) we moved to that. First we used organic ROLLED OATS. Then we found OAT GROATS at the ORGANIC SHOP.
To make the OAT MILK  we needed a BLENDER
                                                         A NUT BAG
A GLASS JAR (to store the                                                milk)
and a  JUG to milk your liquid into.
We also needed 3/4 cup of organic rolled oats or oat groats (Soaked in your water for a short while before blending)
2 1/2 cups of filtered/ distilled/ tank/ water
Place all the ingredients into your blender
and blend until liquid
Pour this liquid into your nut bag
- and milk the liquid through the bag into your jug.
Place your milk into a glass jar for storing.Keep covered and refrigerate.
You will be left with solids. These can be recycled  into curries, biscuits, cakes or into your smoothies
ORGANIC Almond, cashew coconut Milk (Flakes) can be made in the same way- Nuts to be soaked overnight and coconut flakes soaked in warm water.
We alternate the kind of milk we make. Any of these are very YUMMY. - just give a different taste to whatever you are using the milk for.
REMEMBER IT IS IMPORTANT TO BE SCRUPULOUSLY CLEAN.
It is important to use your milk quickly. It doesn't keep for more than a couple of days.  Fresh food, and made from scratch food creations, are always best eaten and not stored for long periods. This is so very important when eating "HEALTHILY!" THE FRESHER THE BETTER!
Fresh AIR keeps the head clear!
